  • Chicken or vegetable broth1⅔ cups
  • Shredded cooked chicken2 oz
  • Grated carrot⅓ cup
  • Lemon juice1 tsp
  • Salt1 pinch

Make this the week before and freeze it flat. On day three you want to reheat something, not cook it.

Method

  1. Warm the broth gently — it should steam, never boil.

  2. Stir the chicken and grated carrot through and give it two minutes.

  3. Finish with the lemon off the heat, and taste before you salt.

  4. Cool anything you are not eating and freeze it in single portions.
